Celery Root Soup
Don’t let the look of this root vegetable fool you it is very delicious. Not only does celery root smell like celery but it also gives similar flavor to dishes. This week my family had our first experience with a CSA through my sons school. They are teaming up with field goods to bring local produce to families and a dollar of your order is given to the school. Currently our school is working on creating its own vegetable garden which I think will be a great way to get children nutritious meals. This week our featured vegetable was celery root. I made cream of celery soup which my son absolutely loved! Find the recipe below!
2 2# celery roots
1 onion diced
6 cups chicken stock
1 bunch scallions diced
1 tbsp olive oil
6 cloves garlic minced
1 cup heavy cream
In Dutch oven sauté celery root, onions, scallions and garlic until translucent making sure garlic is not burning. Next add chicken stock cook for one hour or until celery root is tender. With an Immersion blender, blend soup together. Last temper heavy cream in soup. Enjoy!
